Troll-caught means that the fish are caught by hook and line. This type of fishing makes little impact on the environment and minimal bycatch, otherwise known as non-targeted catch. The salmon are caught one at a time, cleaned by hand and packed in ice, but never frozen. This careful individual handling process yields top quality and superb flavor.
