For the month of October, Breast Cancer Awareness Month, Eggland's Best is again supporting Susan G. Komen for the Cure® with a $50,000 donation. Not only that, they are reminding us all about the fight for the cure by featuring the signature "EB" stamp with the Susan G. Komen Running Ribbon on all varieties of their EB farm fresh eggs.
Eggland's Best is also offering you opportunities to get involved by entering their “Less Talk. More Action.” photo contest on Facebook. Do you have a yummy egg recipe? There is also an EB Pink Dozen Recipe Contest.
I recently created my own Easy Spinach & Cheese Omelet recipe, which is now my "go to" for a quick meal. The key to the recipe is a large pan that allows the eggs to spread thin while cooking.
Easy Spinach & Cheese Omelet Recipe
2 EB Farm Fresh Eggs
3/4 cup fresh spinach leaves
3 Tbsp cup shredded mozzarella cheese
Whisk the eggs together in a small bowl. Heat a large square non-stick skillet to medium high. (You could use a round skillet, but I like the square!) Pour eggs onto the skillet. Once the eggs start to thicken, spread cheese over eggs, sprinkle with garlic salt to taste, and distribute spinach over top. Once eggs start to firm, fold omelet in half and then fold in half again to form a square.
Disclosure: I received Eggland's Best eggs to create my recipe. Any opinions expressed above are my own.
