Kinnikinnick Foods Gluten Free Pancake and Waffle Mix - a Review



Let me start by saying that I usually don't eat/purchase gluten-free foods.  So, I was a bit hesitant when I was approached to review Kinnikinnick Foods gluten-free Pancake and Waffle Mix. I figured that at worst, I would have spent a few minutes cooking up a batch of pancakes that would be enjoyed by my dog. Well, sorry to say for poor Toby, there wasn't a single pancake left for him to try.

The mix is formulated with starch from peas, corn and tapioca along with white rice flour, soy flour, sugar and other gluten-free ingredients. Cooking up the mix is quite easy.  For pancakes you just add an egg, your choice of water, club soda or milk (I used water since I was out of milk) and a bit of oil.  The pancakes cooked very quickly and fluffed right up.  My husband was my secondary taste tester and he loved the pancakes!  And I mean we didn't just think they were good for gluten-free pancakes, they were just good pancakes in general.


I admit that I was more than surprised by how good they were and will definitely be finishing up the rest of the package soon.  I may have to try making the waffles next! And apparently, I'm not the only one who thinks these pancakes are great. Kinnikinnick Pancake & Waffle Mix recently won  Every Day with Rachael Ray’s March 2011 gluten-free baking mix taste test in the pancake and waffle mix category. (Issue is on newsstands now.)
