Amy's Tortilla Casserole & Black Beans Bowl

I found a new yummy "no time to cook" food: Amy's Tortilla Casserole & Black Beans Bowl. From their packaged description it's made with organic baked corn chips and melted cheddar and jack cheeses. Plus...an assortment of organic vegetables and our own homemade fresh tofu and slow-cooked black beans.

I usually am disappointed by frozen entrees, so I was surprised by how good this was. It had distinctive flavor, good texture and it was actually filling. The meal is basically a take-off on the traditional Mexican dish chilaquiles. I often make this myself with layers of chips, veggies, cheese etc. But the Amy's option is great for when you don't have time to cook or need a handy entree to bring to work. Here are the "stats" on it: 390 calories, 18 g fat, 7 g fiber.

This is one frozen entree that I definitely would recommend.
